C\u2019est pourquoi il tient&nbsp;une place de choix dans la cuisine ayurv\u00e9dique, cuisine sant\u00e9 par excellence. Chauff\u00e9s longuement \u00e0 basse temp\u00e9rature, les \u00e9l\u00e9ments du beurre sont dissoci\u00e9s, puis filtr\u00e9. N\u2019est alors conserv\u00e9e que la mati\u00e8re grasse pure. C\u2019est le ghee.<\/p>\n\n\n\n<p class=\"has-accent-2-color has-text-color has-large-font-size\">Le ghee, plus sain que le beurre<br>Cette mati\u00e8re grasse, encore peu connue en Europe pr\u00e9sente d\u2019innombrables atouts. Tout d\u2019abord, contrairement au beurre tel que nous le consommons en occident, le ghee ne s\u2019oxyde pas.<br>En effet,&nbsp;le processus de clarification du beurre permet de ne garder qu\u2019une partie de ses composants, ceux-ci ayant la particularit\u00e9 de se conserver bien plus longtemps qu\u2019un beurre classique, m\u00eame \u00e0 temp\u00e9rature ambiante. Par ailleurs, le ghee pr\u00e9sente l\u2019avantage de ne pas se d\u00e9grader&nbsp;ni noircir lors de la cuisson, m\u00eame \u00e0 haute temp\u00e9rature.<br>Le ghee, c\u2019est \u00e9galement une bonne nouvelle&nbsp;pour les intol\u00e9rants au lactose. En effet, le beurre ayant \u00e9t\u00e9 clarifi\u00e9,&nbsp;il ne contient plus de prot\u00e9ines de lait, et est adapt\u00e9 aux r\u00e9gimes sans laitages.<br>Le ghee en cuisine ayurv\u00e9dique<br>Depuis des si\u00e8cles, le ghee fait partie int\u00e9grante de la cuisine ayurv\u00e9dique. Pour le petit rappel, la cette cuisine est&nbsp;associ\u00e9e \u00e0 l\u2019ayurveda, m\u00e9decine traditionnelle indienne bas\u00e9e sur l\u2019\u00e9quilibre des \u00e9l\u00e9ments et des \u00e9nergies. Or la nourriture est fondamentale pour maintenir cet \u00e9quilibre et, de fait,&nbsp;l\u2019une des cl\u00e9s de la sant\u00e9.<\/p>\n\n\n\n<p class=\"has-accent-2-color has-text-color has-large-font-size\">En ayurveda, le ghee est estim\u00e9 pour ses vertus r\u00e9g\u00e9n\u00e9rantes, nutritives et nettoyantes. R\u00e9\u00e9quilibrant, il facilite le processus digestif. Riche en antioxydants ph\u00e9noliques,\u00a0il est \u00e9galement recommand\u00e9 pour \u00e9liminer les toxines et renforcer le syst\u00e8me immunitaire.<br>Mais le ghee s\u2019utilise \u00e9galement en application cutan\u00e9e. Toujours en m\u00e9decine ayurv\u00e9dique, il est employ\u00e9 pour\u00a0soulager br\u00fblures et coups de soleil, ou plus simplement afin d\u2019hydrater la peau, les l\u00e8vres ou les cheveux.<br>En d\u2019autres termes,\u00a0le ghee pr\u00e9sente de nombreuses vertus pour le corps et la sant\u00e9, qu\u2019il soit employ\u00e9 pour l\u2019alimentation ou pour traiter certains maux.
